I am a culinary student and I ordered this DVD to learn about fondant. I found it easy to understand and appreciated learning about the nuts and bolts, why she did things a certain way, etc. Sharon Zambito seemed to be a pleasant woman; I will use it to practice over and over and over. My only minor complaint is that she did not explain how to decorate the fondant covered cakes with accessories--like ribbons, flowers, etc...

Let me start by saying that I've never used a Cricut product before, but I've been using gumpaste and fondant for about a year on my cakes. This is a fabulous machine. There is a learning curve, but it will work once you figure out the right consistency for your edible materials and with a bit of adjustment to the instructions. You really can cut the intricate designs, not just the basic hearts and whatnot. So don't give up!
First, roll your gumpaste/fondant really thin. As in, you can see the lines on the mat through it. They say to freeze it to help avoid tearing--if you roll it thin, you can use it at room temp. I couldn't get it to work at all frozen, because the condensation from the air on the cold gumpaste pretty much instantly turned it to goo. In general, I think that gumpaste works better than fondant.
Second, if you make your own gumpaste or fondant, you may want to add a bit more powder sugar than usual. Go for structure over flexibility.
Third, use a very very small amount of water (instead of shortening) on the mat if you are having trouble with the material gumming up the machine and sliding around the mat. I wiped the mat down with a damp cloth and tried it with both gumpaste and fondant. The dampness from the cloth is enough to get the sugar to stick to the mat, and it doesn't slide around as much as it does on shortening. Be warned that it will be trickier to get your designs off the mat if you use water--you may have to refrigerate or freeze them after you're done cutting. If you get the material thin enough, the shortening will work, but the thicker stuff I used worked much better with water.
So all in all, are you going to be an instant designer cake decorator with this? No--you have to understand that you're working with sugar, and sugar can be finicky, and there's going to be some trial and error. But you don't have to be a professional to get it to work, either. You just have to be patient.

I see from other reviews that what you're working with doesn't stick to this little rolling pin. So, what is it made of?... (silicone perhaps?), is it solid or hollow? does it feel sturdy when you're pressing down firmly? Just making sure it doesn't crack on me after a couple of uses, etc. Thanks for any help in this area.

I kind of regret this purchase. I bought it when I was taking a Wilton cake class but I wish I hadn't bought it because my wooden rolling pin works just as good (teacher advised us not to use wooden rolling pins because it wouldn't come out smooth, BUT for large pieces of fondant meant to cover a cake you use the side on the bottom). I would advise just trying out using your wooden rolling pin OR buy one of the other Wilton rolling pins that has handles. Not having handles is reeeeaally hard on your hands. However, the small rolling pin that Wilton sells for rolling smaller pieces is something I would recommend.

This "fondant work mat" is really just a giant silpat. Anyone who has a silpat is familiar with the spongy grids inside the mat. This mat has those grids also, and therefore it leaves a grid pattern on the mat side of any fondant you roll. I'm mystified why this is being sold and marketed as a fondant work mat, when Ateco already sells the much better dark blue fondant work mat that is thin and has a solid surface.

I bought these on the off chance that I could get them to work in my cricut expression to cut gumpaste frosting without buying a whole new machine (the cricut cake.) and it worked!!!
the only drawback to using the machine for food AND other uses (vinyl, paper, etc.) is that you could theoretically get grease on your papers and paper on your icing. neither has been a problem for me, but i just made sure to clean up after myself! (and i'm not selling cakes, so it's legit to use the same machine for both. if you have a business, I think this practice is a "no-no.")
